Could Jordan Peterson (or any other faculty member) be disciplined by their university for failing to honor their student's preferred form of address (including pronouns)?

Les Green (Oxford) argues, correctly I think, that the answer is 'yes.'  Academic freedom does not protect speech in the classroom that constitutes sexual or racial harassment; nor does it protect speech in the classroom that undermines the pedagogical environment by demeaning and humiliating students, even if not otherwise unlawful.
